- 4 Jacquet Burger Creation seeded buns
- 1 red onion
- 1 carrot
- 1 celery stalk
- 4 green lettuce leaves
- 1/4 cucumber
- 1 teaspoon rice vinegar (or apple cider vinegar)
- 2 pinches of sugar
- 4 white fish fillets (Pollock, Haddock, Hake)
- 1 egg
- 20 g flour
- 100 g breadcrumbs
- 2 tablespoons grapeseed oil
- salt and freshly ground black pepper
- 1 egg yolk
- 1 teaspoon mustard
- 10 cl rapeseed oil
- 2 sweet and sour pickles
- 5 chive sprigs

Wash and slice the cucumber into thin strips. Let it drain with the vinegar and sugar.

Peel and slice the onion and carrot into thin rounds.

Remove the strings from the celery and cut it into thin rounds.

Prepare the tartar sauce: cut the pickle into small cubes, finely chop the chives. Mix the mustard and egg yolk. Emulsify the sauce by gradually adding the oil while whisking constantly. Season with a pinch of salt and pepper. Add the pickle and chives. Set aside.

Cook the fish: Beat the egg. Dredge the fish fillets in flour, then in the egg and breadcrumbs. Pan-fry the breaded fish fillets in hot oil for 1 to 2 minutes on each side, set aside on paper towels.

Cut the burger buns in half. Optionally, warm the open burger buns for a few minutes in an oven at 180°C.

On the base, spread a little tartar sauce, add the lettuce, marinated cucumber, fish fillet, carrots, celery, and red onions. Finish with tartar sauce and close the burger. Enjoy immediately.
