- 1 slice of watermelon, 3 cm thick
- 5 cl olive oil
- 80 g Nyons black olives
- rosemary (a few sprigs)
- 1 fresh goat cheese
- 1 handful of arugula
- balsamic vinegar
- fine grey sea salt
- Espelette pepper

Place the slice of watermelon in a dish; prick it with rosemary and add salt. Let it marinate for 30 minutes.

Pat the watermelon dry and brush with oil. Place it on the barbecue grill and let it grill for 10 minutes.

Slide the slice onto a platter, top with arugula, drizzle with a few drops of balsamic vinegar, and add the olives and pieces of goat cheese. Drizzle with a little olive oil, add a pinch of Espelette pepper, then slice into 6 pieces and enjoy.
