- 350 g buffalo ricotta or fresh ricotta
- blackberry balsamic glaze
- 300 g Parma Ham PDO
- 600 g T45 flour
- turmeric
- 1 potato
- 1/2 cube fresh yeast
- 15 g salt
- 1 tablespoon sugar
- 450 g lukewarm water
- 100 g arugula
- 100 g mixed baby greens
- 50 g walnuts
- 15 g EVOO
- 5 g salt

For the focaccia dough: peel the potato and cut it into small pieces.

Blend the potato with the yeast for 1 minute.

Mix the yeast, potato, sugar, a little water, and flour with turmeric.

Gradually add the remaining ingredients (salt last) and knead for a few minutes in a food processor or by hand.

Let the dough rest for at least 1 hour and 30 minutes.

Baking the focaccia: prepare the pan with EVO oil.

Spread out the focaccia dough.

Add a little EVO oil and some coarse salt.
