    In a food processor, add the fresh shrimp, squid paste, sesame oil, Chinese wine, poultry seasoning mix, and egg whites. Pulse to get a coarse paste, then transfer to a bowl.

    Stir in the chopped water chestnuts, coriander, chopped green onions, water, rice flour, garlic oil, and pepper to taste.

    Divide the shrimp paste mixture into 12 equal portions and roll each portion into a ball. Cut 8 slices of white bread into small cubes. Dip the seafood balls in water and roll them in the bread cubes.
