    Peel and thinly slice the onions. Over low heat, sauté and stew them for about 10 minutes.

    Peel the potatoes and slice them thinly using a mandoline.

    Cut the smoked herring into small pieces.

    In a bowl, mix the thick crème fraîche, a little milk if needed, the spices, the lemon juice, and season with salt and pepper to your liking.

    In a gratin dish, pour a base of olive oil, then add half the potatoes, the smoked herring, the onions, and half of the cream mixture.

    Add the other half of the potatoes and pour over the rest of the cream mixture. Sprinkle with breadcrumbs and dots of butter.

    Bake for 40 minutes at 180°C. It's ready!
