- 4 thick free-range chicken breasts
- 200 g fresh goat cheese
- 2 pitted green olives
- tarragon (a few sprigs)
- 4 slices of dry-cured ham
- 1 pinch of Espelette pepper
- 3 tablespoons of olive oil

Preheat the oven to 200°C (gas mark 6-7).

Cut the chicken breasts horizontally to create a pocket. Roughly chop the olives and mix with the goat cheese. Finely chop the tarragon and add it to the mixture along with the Espelette pepper.

Stuff the chicken breasts with the goat cheese mixture. Place each breast on a slice of ham and wrap the ham around the chicken.
