Ingredients

- 1 small bowl of water (lukewarm)
- 5 tablespoons of sugar
- 4 eggs
- 465 g mascarpone
- 3 tablespoons of matcha tea
- 1 package of ladyfingers (or sponge fingers of your choice)

Whisk the egg yolks with the sugar for 7-8 minutes until the mixture doubles in volume

Gently add the mascarpone to the mixture

Beat the egg whites until stiff and gently fold them into the mixture

Divide the mixture into two parts and add 1 tablespoon of matcha tea to one of the halves (mix well)

Mix 1 tbsp of matcha tea into the bowl of warm water

For assembly, take a dish (or a stainless steel ring/square lined with acetate). Dip the ladyfingers in the water/matcha tea mixture and place them at the bottom of the dish, packing them tightly

Add a second layer of ladyfingers dipped in the water/matcha tea mixture

Using a piping bag, pipe the plain cream in small balls (it is perfectly possible to make this recipe without piping, just spread the cream with a spatula!), and place everything in the refrigerator for at least 2-3 hours

Upon removing from the refrigerator, sprinkle with matcha tea using a sieve (and remove the ring if the matchamisu was not made in a dish). It's ready to be enjoyed!
