- 2 tablespoons grated parmesan
- 300 g spinach
- 1 clove garlic
- 20 g butter
- salt and pepper

Preheat the oven to 210°C (410°F) on fan-assisted grill mode.

Peel, wash and drain the spinach.

Melt the butter in a pan and add the garlic, peeled and halved. When foaming, add the spinach, season and cook for 2 to 3 minutes. Distribute the spinach into 4 ramekins.

Separate the egg whites from the yolks, whip the whites until stiff with a pinch of salt. Add the grated parmesan at low speed or using a spatula.

Place the mixture in domes into the ramekins. Make a hole in the center using an empty shell. Bake for 4 to 5 minutes. Remove the dishes from the oven and place the egg yolks in the center of the whites. Put back in the oven for 2 minutes and serve very hot.
