- 2 ready-to-use buckwheat pancakes
- 1 puff pastry
- 6 tablespoons hummus
- 2 tablespoons olive oil
- 2 egg yolks

Season the filet mignon with salt and pepper, then brown it in the oil on all sides. Let it rest for 20 minutes.

Spread the hummus over it and wrap it in the buckwheat crepes. Roll out the dough and brush with egg yolk. Seal the edges. Brush with egg yolk thinned with a few drops of water.
